  • These spent extra time near the smoker’s hot center, so they’re a bit drier and chewier still full of flavor.

  • These are fully cooked and totally safe, but because of higher humidity in the smoker or extra fat, they have more moisture and are less firm. This means they won’t stay fresh at room temperature as long, so refrigeration preserves them better prevents any potential for mold growth.

  • Fat or collagen bits or bulges, an odd pepper seed, or occasional flecks of charcoal dust that can be seen on the outside of some Stix can make them look odd on the outside, even though they are still totally delicious on the inside.

  • A wrinkled wrapper or off-center seal is more likely to lose it’s vacuum seal and so these need to be kept in cold storage just in case.

  • If the temperature of the vacuum sealer is off by even 1 degree it can cause the wrapping to overseal, making it difficult to peel open as as expected. Scissors or serious finger power will get the job done though.

  • End piece packages are comprised of 1-2 inch pieces which are cut off the ends of the Stix to make them a uniform size.

    They are vacuum packed into 4 oz packages (equivalent to 4 Stix).

    Because of all the air pockets that remain between the little pieces, they do not have the same shelf life and have to be refrigerated or they will mold within a month or two.

All our Stix, odd or not, are made in a USDA-inspected facility that follows strict safety and quality protocols. Every beef stick that leaves the facility has been inspected to be totally safe.

Although these odds and ends are best kept refrigerated for long-term longevity, they are all considered room-temperature stable (65 Degrees is defined as room temp) and are still totally safe if put in a bag or lunchbox for the day.
